Kitchen Manager/Sous Chef - Kitchen 1883 - Anderson

Position Summary:

Oversee and manage all kitchen operations, including supervision of all kitchen staff and staffing levels, scheduling, financial targets, food safety and sanitation, housekeeping, kitchen safety and food production-related activities. Cultivate a high quality and morale of kitchen staff through training and development that supports the Our Promise strategy. Essential Job Functions:

  • Supervise and coach direct reports in the performance of their duties; complete performance reviews and provide feedback to direct reports
  • Manage staff and processes to support cost control responsibilities for food costs, labor costs and kitchen supplies
  • Develop operational goals and plans to achieve or exceed budgets, P&L variance reports and ensure staff executes against these
  • Maintain food quality and safety standards by overseeing all phases of food procurement, production, service, inventory, ordering, storage, rotation, food preparation, recipe adherence, plate presentation, and production time standards
  • Conduct daily line checks and ongoing kitchen maintenance, observe housekeeping and staff daily activities and respond to food reviews and guest feedback or scores
  • Check food deliveries for quality and order accuracy; maintain proper food inventories
  • Supervise the timeliness of food preparation to have all ticket items ready to be served within defined time standard
  • Oversee the quality of foods to ensure they are prepared and plated according to standard; train staff on menus and service standards
  • Verify proper food safety/sanitation standards are met, such as temperature logs, timely temperature checks, maintenance of proper cooking and holding temperatures, proper labeling of prepared line items and storage and correct slacking procedures
  • Comply with federal, state, local and company food safety guidelines, food handling procedures and hazard analysis and critical control points (HACCP) rules governing sanitation and the cleanliness/maintenance of kitchen
  • Develop daily special menu creations and costing
  • Manage front of house (FOH) and back of house (BOH) when acting manager on duty
  • Maintain flexibility to work any shift, including nights, weekends and holidays
  • Must be able to perform the essential functions of this position with or without reasonable accommodation

Minimum Position Qualifications/Education:

  • 5+ years of kitchen experience with 2+ years management experience in a full service, moderate to high-volume restaurant
  • Strong communication and leadership skills with proven success motivating teams and maintaining high retention rates
  • Proven success driving sales and maintaining labor and food costs
  • Serve Safe Certification must be current or attained within 6 months or less
  • Demonstrate thorough knowledge of and adherence to licensing and labor laws, health and safety regulations and food handling and hygiene laws
  • Ability to multi-task and adapt quickly to change
  • Ability to work in a standing position for an entire shift
  • Able to reach, bend, stoop, push and lift objects up to 50 pounds

Desired Previous Job Experience/Qualifications:

  • Culinary certificate from a two-year college or technical school
  • Associates degree in culinary arts
  • Knowledge of Microsoft Excel
